Anti-oxidative and muscle cell protective effects of ginger extract according to the extraction conditions

Ginger (Zingiber officinale Rosc.) root is known to have anti-oxidative effects. However, studies on the extraction conditions obtain ginger extract (GE) with high antioxidant power not yielded satisfactory results. Therefore, effects of temperature and time GE were investigated. The content 6-gingerol 6-shogaol in was also analyzed. results revealed that carried out at 50°C for 5 h optimal maintaining activity GE. Further, obtained under these exhibited highest DPPH ABTS+ radical scavenging activities cytoprotective effect against oxidative damage L6 skeletal muscle cells rich active compounds. Thus, could be useful development functional food materials.
